Snickerdoodles

Da ich die Tage mir ein zeitintensives Sportprogramm zugelegt habe, bin ich leider nicht wirklich zum Backen gekommen. Nichtsdestotrotz musste ich ja Prioritäten setzen und habe endlich mir die Zeit genommen, um für euch etwas leckeres zu zaubern. Es muss ja nicht immer gleich ein aufwendiger Kuchen sein, der das Herz höher schlagen lässt, nein, es sind manchmal die einfachen Dinge im Leben. 🙂

Snickerdoodles sind luftige, fluffige Kekse aus Cynthia Barcomi´s Buch „Backen – I love baking“. Habe ich schon mal erwähnt, dass ich ihre Rezepte einfach toll finde? 😉

Zutaten für circa 35 Cookies:

  • 385 g Mehl
  • 2 TL Backpulver
  • 1/2 TL Salz
  • 250 g weiche Butter
  • 300 g Zucker
  • 2 Eier
  • 6 EL Zucker + 3 TL Zimt

Zubereitung:

Den Ofen auf 180 °C Umluft vorheizen. Mehl, Backpulver und Salz verrühren und in eine Schüssel sieben. Danach die 6 EL Zucker und 3 TL Zimt mischen und beiseite stellen.

Mit dem Schneebesen eines Mixers die Butter cremig schlagen, Zucker dazugeben und so lange weiterschlagen, bis die Masse leicht und fluffig geworden ist. Die beiden Eier dazugeben und einige Minuten länger rühren.

Nun mit einem Kochlöffel oder einem Gummispachtel die Mehl-Backpulver-Mischung unterrühren, bis gerade so ein Teig entstanden ist. Diesen Teig teelöffelweise mit den Händen zu einer Kugel formen und dann in der Zucker-Zimt-Mischung wenden. Die Kugeln auf 2 mit Backpapier ausgelegten Blechen verteilen und zwischen jeder Kugel mindestens 6 cm Abstand lassen. Nicht platt drücken! Der Teig reicht für ca. 4-5 Backbleche aus. Während des Backens erhalten sie die flache Cookie-Form.

Für circa 10 – 12 Minuten im Ofen lassen, bis sie braun geworden sind.
